  • 3/4 cup of cornmeal
  • 1/2 cup of natural culinary sweetener
  • 1 slightly teaspoon of fennel seeds
  • 1 tablespoon of light margarine
  • 2 egg whites (beaten until stiff peaks form)
  • 2 egg yolks
  • 1 slightly teaspoon of dissolved baking powder
  • 1/4 cup of skim milk

Utensils:

  • Saucepan
  • Square baking pan (20 cm)
  • Margarine (for greasing)
  • Cornmeal (for dusting)

Instructions:

  1. In a saucepan, mix milk, cornmeal, sweetener, fennel seeds, and margarine. Heat over medium heat, stirring constantly, until it thickens.
  2. Allow the mixture to cool, then gently fold in the beaten egg whites, egg yolks, and dissolved baking powder.
  3. Pour the batter into a greased and cornmeal-dusted square baking pan (20 cm).
  4. Bake in a preheated oven at 180ºC for approximately 40 minutes or until golden brown.
  5. Unmold the cake while it is still warm.
